1. Beat the eggs, add chopped green onion, milk, flour, tomato sauce, salt and pepper and mix well (the batter should be thinner)

2. Put a small piece of butter on the pan and place the mold in the middle of the pan to prevent the butter from flowing out of the mold (I bought a very simple round mold)

3. Use a spoon to scoop out the egg mixture and pour it into the mold. It is better to have a thickness of about 1 cm. Cover with a small fire and simmer for about a minute.

4. Shake the mold. When you find that the bottom has been formed, you can use a knife to cut a circle along the edge of the mold. Then remove the mold, turn it over and fry it for another minute. When you insert a toothpick and find that it is solid inside, you can remove from the pan.

Tips

1. You don’t have to add ketchup to the egg mixture in advance. You can just squeeze it on the omelet at the end.

2. Actually, what I used was not chopped green onions but leaves of a plant called basil, which is usually put in pasta. This spice rub is quite strong, so add some ketchup to complement it.

3. Be sure to cover and simmer over low heat so that it will be easier to shape. Don't be impatient when frying.

4. Add butter again every time you fry one!
