1. Preparation of ingredients

Flour (260 grams), corn flour (60 grams), salt 2 grams, sugar 6 grams, yeast 3-5 grams, oil 6 grams, milk powder 6 grams, water 175 grams.

1. Preparation and weighing of ingredients. Use a small scale to weigh all the ingredients you will use and set aside.

2. Knead the dough. Pour all the weighed ingredients into the bread machine and start kneading the dough for 15 minutes. Knead all the ingredients into a smooth dough in the bread machine and set aside.

3. Tips for kneading dough. When kneading dough in the summer, we usually open the lid of the bread machine to knead the dough in order to see the condition inside and lower the temperature inside. However, the flour is easy to splash out when we just start kneading the dough. Here is a little trick. You can cut a top cover with transparent plastic cloth and cover it on the bread bucket. In this way, you can prevent flour from splashing and observe the condition inside.

4. Fermentation. After the dough is kneaded, cover the bread machine with a thin blanket and let it ferment for about an hour. The dough will be ready. The fermentation time can be appropriately extended or shortened depending on the temperature. If the temperature is high, the fermentation time will be shorter. If the temperature is low, the fermentation time will be longer.

5. Knead the dough. After the dough has risen, use a bread machine to knead it again for 10 minutes to expel the gas inside and prepare for shaping and further fermentation.

6. Let the dough rest. After kneading the dough for 10 minutes, put it in the bread machine, cover it, and let it rise for a while, about 5-10 minutes. The purpose of this step of letting the dough rest is to increase its ductility so that it can be better shaped in the next step.

7. Shaping. Then take the dough out of the bread machine and shape it on a chopping board. Make them into bun shapes.

8. Ferment again—a little trick to make steamed buns taste better.

Method 1: Cover the shaped buns with a piece of wet gauze and let them ferment again at room temperature for nearly 1 hour. When the dough becomes very large and light to hold, you can put it into the steamer. The advantage of doing this is that you can control the fermentation status at any time.

Method 2: Ferment again directly in the steamer. The advantage of this is that the fermented steamed buns are very soft and light, and it is easy to leave fingerprints when putting them into the pot again. Therefore, in order to make the steamed buns look beautiful in the future, this step requires them to be fermented directly in the steamer.

9. Steamed buns.

Prepare dry corn husks, soak them in water, and put them under the steamed buns to make them taste better.

Add water to the steamer and start steaming the buns over medium heat. Steam for about 15 to 20 minutes and the buns will be ready.

Here is a little trick to make the steamed buns look better and taste better. After turning off the heat, don’t rush to lift the lid of the pot immediately. Let the steamed buns stay in the pot for another 3 to 5 minutes before opening the lid. The advantage of doing this is that it can prevent the steamed buns from shrinking and becoming ugly, and it can also keep the steamed buns moist, so they won’t become dry and hard when you eat them for the next meal.
